Cart noodle is an à la carte noodle dish which became popular in Hong Kong and canton area since the 1950s through independent street vendors operating on roadsides and in public housing estates in low-income districts, using carts. Many street vendors have vanished, but the name and style of noodle endures as a cultural icon. It is iconic noodle dish for Hong Kong just like ramen in Japan and spaghetti from Italy.  Cart noodle takes tons of heart and dedication to prepare. With usually more than twenty toppings, numerous types of noodles, each item takes specific technic to cook to perfection.
